Shelly Lotan is the Co-Founder & CEO of Medium Well, a foodtech company developing BioResin, a smart and sustainable molecular separation technology that enables efficient protein purification for food and biotech applications. 10–50x cheaper, scalable, food-grade, and made from upcycled food waste, BioResin can be used 50+ times (filtration cycles without performance degradation) before becoming too saturated to re-use. Shelly is dedicated to transforming global food systems through sustainable, science-driven solutions.
With a legal background and a master’s degree from Northwestern University, Shelly combines strategic, commercial, and scientific perspectives to scale impactful technologies. She previously founded and led Cordio Medical, a digital health startup, and held senior business development roles in biotech ventures, as well as a senior governmental position advancing international transactions.
